Aubergine Curry with Lemongrass & Coconut Milk
A really yummy curry that I made tonight. I also regarded aubergines as bland but in this dish, they took on loads of flavour.

With my wife being vegetarian this is an easy win. It's delicious on brioche buns with some homemade coleslaw.
